Each region in the Kingdom has its own distinctive cuisine that incorporates different spices, ingredients or cooking methods. The kitchens of the southern Asir province continue to serve delicious dishes, most of which are made with ghee and honey.
To cook a delicious Aseeda dish, mix your favorite flour, whether it is wheat, corn, or barley, with water in a pot over the fire. Continue to stir the mixture until you have a soft dough. Put the dough in a hot skillet and cover it, then leave it on a medium heat for 10 minutes. Serve the porridge with honey or dates.
Al-Haneeth is one of the most famous southern foods, especially in Asir and Tuhama. Meat is placed in a hollow pit built in a certain way in order to facilitate cooking at a high heat. The pit is then covered and filled with dirt so that steam does not come out. After two hours, the meat comes out very tender and tasty.
This delicious meal suitable for breakfast consists of a light dough in which ghee and honey are poured and garnished with dates. The dough is placed in a tin over a heat source until it evens out. Then it is kneaded until it turns into a circular shape.
This is one of the easiest southern dishes you can make. It also consists of baked dough in a round container, with the edges kneaded well by hand until it is firmly flattened over the fire. The dish is usually served with ghee or honey.
